Green tea likes cooler water, around 175°F, for two to three minutes. Boiling water scorches the leaves and pulls out bitterness.
Black tea can take water just off the boil and three to five minutes. Shorter gives a brisk cup, longer suits milk.
Oolong sits in the middle, around 190°F for three to four minutes, and good leaves can be steeped several times.
Herbal infusions such as chamomile, mint or rooibos are forgiving. Use boiling water and give them five to seven minutes.
Loose leaf needs room to unfurl, so use a roomy infuser or brew in the pot and strain. About one teaspoon per cup is a good start.
